Strawberry Season: Indulge in the Sweetness of Spring

Welcome back, sunshine! That sweet scent of strawberries in the air means one thing.  Spring is here, and it's bringing the juiciest treats with it! To celebrate their glorious return, we're sharing a timeless Southern delight - Strawberry Icebox Pie. And trust us, it's as easy to make as it is to devour!

Crafted with love and just five simple ingredients, this Strawberry Icebox Pie is the epitome of springtime delight. Imagine a luscious homemade strawberry sauce swirled into a creamy blend of cream cheese and sweetened condensed milk, all nestled in a buttery graham cracker crust. It's fresh, it's delicious, and it's guaranteed to put a smile on your face with every bite.

And the best part? This frozen treat is an absolute breeze to make. No baking required! Simply gather your ingredients, pour them into the crust, and pop it in the freezer for a few hours. Voila! You've got yourself a show-stopping dessert that's perfect for any occasion, from backyard barbecues to family gatherings.

And speaking of gatherings, mark your calendars for the Lowcountry Strawberry Festival at Boone Hall Plantation from April 5th to 7th and April 12th to 14th. It's a family-friendly extravaganza featuring rides, a petting zoo, acrobatic dog shows, and yes, even strawberry pie-eating contests! Plus, don’t forget to explore  the U-Pick Fields and pluck your own juicy berries straight from the vine.

Ready to whip up your own Strawberry Icebox Pie and indulge in the flavors of the season? Here’s the full recipe:

Ingredients

  • 8 oz cream cheese
  • 1 qt fresh strawberries divided, hulled
  • 1/4 cup sugar
  • 1 tbsp water
  • 14 oz sweetened condensed milk
  • 1 prepared graham cracker pie crust

 

Instructions

  1. First, wash and hull (remove stems and leaves) the strawberries. Cut half of the strawberries in half and slice the remaining strawberries (to put on top of the pie) and set aside.
  2. Then, in a small saucepan, add the half-cut strawberries, water and the sugar. Cook on med heat until it begins to boil. Then, reduce heat to low and cook until strawberries are soft. Set aside to cool completely.
  3. Then, using a hand or stand mixer, add cream cheese and sweetened condensed milk. Mix until combined.
  4. Next, when the cooked strawberries have cooled, add them to the cream cheese mixture and mix until combined.
  5. Then, pour the cream cheese mixture into the prepared graham cracker crust. Put in the freezer for at least four hours before serving.
  6. Last, top the cream cheese pie with strawberry slices.
